Chef Gillex Marx of Amuz is a genius.. He would never himself tell you this, of course, but the plates that leave his kitchen have been touched with the epicurean élan that has been the calling of all French chefs since Escoffier. But again: Chef Marx would never be so gauche as to tell you that himself. He lets the food speak for him.
